I must admit, bleu cheese (and gorgonzola) is an acquired taste. I've heard all kinds of things when it comes to bleu cheese.
"I'm not eating THAT."
Here's my favorite....."You do know it has MOLD in it, don't you?" This coming from someone who was wolfing down a yogurt at the time.
No matter, I love bleu cheese. I never buy any container of bleu cheese in the store. None of them hold a candle to homemade dressing. None at all.
It's not that hard to make, and I love that I can customize it with the amount of bleu cheese that I want.
It's awesome on salads, on top of burgers, as a side to buffalo wings, or just as a dip for cut up veggies.
However you serve it, make sure you have the recipe on hand.
You'll be asked for it. I guarantee it.
